500 g wheat flour
300 ml kefir
1 tsp bicarbonate of soda
1 tsp salt
450 g fresh cheese
80 g butter
Mix the dough
Mix the flour, bicarbonate and salt. Add the kefir gradually and knead a soft, non-sticky dough; cover and rest for 20 minutes.
Prepare the cheese
Crumble and taste the fresh cheese; add a little salt only if needed. Divide the filling into six equal portions.
Fill and roll
Divide the dough into six. Roll each piece, place one portion of cheese in the centre, seal the edges and gently roll seam-side down into a thin round that fits the pan.
Cook on a dry pan
Shake off excess flour. Cook each bread on a well-heated, ungreased pan until both sides bubble and develop brown spots.
Butter and serve
If desired, touch the cooked bread briefly to hot water and drain immediately. Butter both sides, stack and slice while warm.

If the filling escapes, reduce the portion and roll gently to an even thickness rather than pressing harder. When the cheese is moist, observe whether it holds its shape; drain the remainder before trying again if necessary. The first bread on the dry pan will show how heat and cheese behave together. Keep the same proportion once the result is balanced. The brief hot-water touch and butter finish described here are a home interpretation, not a single “authentic” rule for every family.
