Quick answer
Khingalsh is a thin Chechen flatbread filled with pumpkin. Pumpkin moisture determines the result: overly wet purée softens the dough, while a dry filling loses character. It is cooked on a dry pan and softened with a warm finish and butter.

Khingalsh recipe: Chechen pumpkin flatbread
500 g wheat flour
300 ml kefir
1 tsp bicarbonate of soda
1 tsp salt
700 g cooked, drained pumpkin
1 medium onion
80 g butter
Prepare the filling
Drain excess moisture from the pumpkin and mash it. Finely chop the onion, soften it in a small amount of the butter and fold it into the purée; season and cool completely.
Mix the dough
Mix the flour, bicarbonate and salt. Add kefir gradually and knead a soft, non-sticky dough; cover and rest for 20 minutes.
Enclose the filling
Divide the dough and cold filling into six equal portions. Roll each dough piece, place filling in the centre, seal and gently roll seam-side down into a thin round.
Cook on a dry pan
Shake off excess flour. Cook each bread on a well-heated, ungreased pan until both sides bubble and develop brown spots.
Soften and serve
Touch each cooked bread briefly to hot water and drain immediately. Butter both sides with the remaining butter, stack and serve warm in triangles.
Allergen and safety
Contains wheat/gluten and milk from kefir and butter.
Allergen and safety
Cool the filling completely before it touches the dough; refrigerate leftovers within two hours.
Pumpkin filling
Bake or steam the pumpkin until tender, drain excess moisture and mash. Soften onion, fold it into the purée, season and cool completely. Warm or watery filling makes thin dough difficult.
Shaping and cooking
Rest and divide the kefir dough. Enclose the filling and roll into a thin round. Cook both sides on a dry hot pan, clean the surface and soften with hot water and butter. Serve warm in triangles.
Use the first bread as a calibration test
Treat the first khingalsh as a calibration piece rather than part of the serving batch. Once the pumpkin filling is completely cool and excess moisture has been removed, fill a small dough portion, roll it gently and cook it on the dry hot pan. This trial reveals the filling’s movement, the strength of the seal, the bread’s thickness and the pan together. If filling spreads, drain and cool the remaining mixture again; if the dough feels strained, work more slowly and evenly instead of pressing harder. When the result is right, repeat the same filling portion and rolling rhythm. Finish the cooked breads warm with butter and stack them, preserving tenderness while adapting carefully to the pumpkin’s variable moisture.
